  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 2 cups chopped leafy greens (spinach or kale)
  • 1 cup green beans, trimmed and cut
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until soft.
  3. Add garlic and cook for 1 minute.
  4. Stir in diced tomatoes, vegetable broth, thyme, basil, and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add leafy greens and green beans; cook for another 10 minutes.
  7. Season with salt and pepper to taste.
  8. Remove the bay leaf before serving.

Notes

  • For a richer flavor, add a splash of balsamic vinegar.
  • This soup is great for meal prep; store it in the fridge for 3-4 days.
