Vegan Creamy Sun Dried Tomato Pasta Recipe

  • 1 cup sun dried tomatoes, packed in oil, drained and chopped
  • 1 cup coconut cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat a bit of the oil from the sun dried tomatoes over medium heat.
  3. Add the minced garlic and sauté until fragrant.
  4. Stir in the chopped sun dried tomatoes, coconut cream, basil, oregano, and salt. Mix well and let simmer for 5 minutes.
  5. Drain the pasta and add it to the skillet. Toss to coat in the sauce.
  6. Serve warm, garnished with fresh basil.
