Vegan Bolognese

The perfect vegan bolognese that warms your soul and satisfies your cravings.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 2 cups mushrooms, chopped
  • 1 can (15 ounces) lentils, drained and rinsed
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon balsamic vinegar
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery; sauté for 5-7 minutes until softened.
  3. Stir in the garlic, oregano, basil, and red pepper flakes; cook for 1 minute.
  4. Add the mushrooms and cook until they release their juices, about 5 minutes.
  5. Stir in the lentils, crushed tomatoes, and tomato paste; bring to a simmer.
  6. Season with salt, pepper, and balsamic vinegar. Cook for 20 minutes, stirring occasionally.
  7. Serve over pasta and garnish with fresh basil.
