  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup milk
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with the flour mixture.
  6. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
