Tropical Mango Coconut Trifle

A tropical delight combining layers of fresh mango, coconut cream, and sponge cake.

Ingredients

  • 2 ripe mangos, diced
  • 1 cup coconut cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 cups vanilla sponge cake, cubed
  • 1 cup toasted coconut flakes

Instructions

  1. In a mixing bowl, whisk coconut cream, powdered sugar, and vanilla extract until smooth.
  2. In serving glasses, layer cubed sponge cake at the bottom.
  3. Add a layer of diced mango, followed by a layer of the coconut cream mixture.
  4. Repeat the layers until the glasses are full, finishing with the coconut cream on top.
  5. Garnish with toasted coconut flakes and additional mango pieces.
  6. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • This trifle can be made a day ahead for better flavor.
  • Feel free to add other tropical fruits like pineapple or kiwi.
