  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strong coffee, cooled
  • 1/2 cup mascarpone cheese
  • 1 cup whipped cream
  • 2 tablespoons cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, cream the granulated sugar, brown sugar, and butter until fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  5. Gradually mix in the dry ingredients, then fold in the coffee and mascarpone until combined.
  6. Scoop the batter into the liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
  8. Top with whipped cream and dust with cocoa powder before serving.

Notes

  • For a stronger coffee flavor, use espresso instead of regular coffee.
  • Store cupcakes in the fridge if not consumed immediately.
