- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup strong coffee, cooled
- 1/2 cup mascarpone cheese
- 1 cup whipped cream
- 2 tablespoons cocoa powder for dusting
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, cream the granulated sugar, brown sugar, and butter until fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Gradually mix in the dry ingredients, then fold in the coffee and mascarpone until combined.
- Scoop the batter into the liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
- Top with whipped cream and dust with cocoa powder before serving.
