  • 1/4 cup coconut oil, melted

  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas until smooth, then mix in the maple syrup, melted coconut oil, and vanilla extract.
  3. In another bowl, whisk together the gluten-free flour, baking soda, and salt.
  4. Combine the wet and dry ingredients, stirring just until incorporated. Fold in walnuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
