Thai Red Curry Noodle Soup

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 200 grams rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup spinach, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced onion, garlic, and ginger; sauté until the onion is translucent.
  3. Stir in the red curry paste and cook for an additional minute.
  4. Add the vegetable broth and coconut milk; bring to a simmer.
  5. Stir in the rice noodles and cook according to package instructions.
  6. Add the sliced bell peppers and chopped spinach; cook until tender.
  7. Remove from heat; stir in lime juice and soy sauce.
  8. Garnish with fresh cilantro before serving.

Notes

  • For extra protein, add cooked chicken or tofu.
  • Adjust the spiciness by adding more or less red curry paste.
