Thai Red Curry Noodle Soup

  • 200 grams rice noodles
  • 1 tablespoon vegetable oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tablespoon red curry paste
  • 400 ml coconut milk
  • 500 ml vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger grated
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 1 lime juiced
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the onion and garlic and sauté until soft.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the coconut milk and vegetable broth, and bring to a simmer.
  5. Add the rice noodles and cook according to package instructions.
  6. Stir in the soy sauce, ginger, and mixed vegetables.
  7. Once the vegetables are tender, remove from heat and stir in lime juice.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier soup, add more red curry paste.
