Thai Coconut Curry Soup

Ingredients

  • 1 tablespoon coconut oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 1 cup cooked rice or noodles
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic and ginger, cooking for an additional minute.
  4. Add the red curry paste and cook for 2 minutes.
  5. Pour in the coconut milk and vegetable broth, stirring well.
  6. Bring the mixture to a simmer and add the soy sauce.
  7. Add the mixed vegetables and cook until they are tender, about 5-7 minutes.
  8. Stir in the cooked rice or noodles.
  9. Remove from heat and add lime juice.
  10. Serve hot, garnished with fresh cilantro.

Notes

  • This soup can be made vegetarian or vegan by using vegetable broth and tofu.
  • Adjust the spiciness by adding more or less curry paste.
  • Storage: The soup can be stored in an airtight container in the refrigerator for up to 3 days.
