- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 2 cups mixed vegetables (carrots, bell peppers, broccoli)
- 1 cup cooked rice or noodles
- 1 tablespoon lime juice
- Fresh cilantro for garnish
- In a large pot, heat the coconut oil over medium heat.
- Add the onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and ginger, cooking for an additional minute.
- Add the red curry paste and cook for 2 minutes.
- Pour in the coconut milk and vegetable broth, stirring well.
- Bring the mixture to a simmer and add the soy sauce.
- Add the mixed vegetables and cook until they are tender, about 5-7 minutes.
- Stir in the cooked rice or noodles.
- Remove from heat and add lime juice.
