  • 1 teaspoon ginger, grated
  • 1 cup dumplings (store-bought or homemade)
  • 1 cup mixed vegetables (carrots, bell peppers, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine vegetable broth, coconut milk, curry paste, and ginger over medium heat.
  2. Bring the mixture to a simmer, stirring occasionally.
  3. Add the dumplings and mixed vegetables, cooking until the dumplings are cooked through.
  4. Stir in soy sauce and lime juice just before serving.
