Sweet Potato and Chili Soup

A comforting and delicious sweet potato and chili soup that’s perfect for chilly days.

Ingredients

  • 2 cups sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the sweet potatoes, red bell pepper, chili powder, cumin, salt, and pepper.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  5. Stir in black beans and cook for an additional 5 minutes.
  6. Use an immersion blender to puree soup to desired consistency.
