Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, pureed
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • ½ cup heavy cream
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the vanilla extract and strawberry puree.
  5. In a separate bowl, combine the flour, baking powder, and salt. Gradually add this to the wet mixture, alternating with the milk.
  6. Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Let the cakes cool for 10 minutes in the pans, then transfer to wire racks to cool completely.
  8. For the frosting, beat the cream cheese until smooth, then gradually add the powdered sugar and heavy cream until creamy.
  9. Once the cakes are cool, layer them with frosting between each layer and on top.
  10. Decorate with fresh strawberries if desired.
