- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, pureed
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- ½ cup heavy cream
- ½ teaspoon salt
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract and strawberry puree.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add this to the wet mixture, alternating with the milk.
- Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool for 10 minutes in the pans, then transfer to wire racks to cool completely.
- For the frosting, beat the cream cheese until smooth, then gradually add the powdered sugar and heavy cream until creamy.
- Once the cakes are cool, layer them with frosting between each layer and on top.
- Decorate with fresh strawberries if desired.
Notes
- For a richer flavor, use fresh strawberry puree instead of store-bought.
- You can use a mix of cream cheese and mascarpone for a different texture in the frosting.
