Ingredients

  • 1 cup chopped onion
  • 2 cups diced carrots
  • 2 cups diced celery
  • 3 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup biscuits or pie crust, cut into pieces

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery; sauté until tender.
  3. Stir in the garlic and cook for another minute.
  4. Add the shredded chicken, chicken broth, peas, thyme, salt, and pepper; bring to a simmer.
