2 cups jasmine rice
1 can coconut milk
1 pound salmon fillets
2 tablespoons soy sauce
1 tablespoon sriracha
1 teaspoon garlic powder
1 teaspoon ginger powder
1 tablespoon olive oil
1/4 cup green onion, chopped
1 lime, juiced
Instructions
Rinse and drain the jasmine rice, then combine it with coconut milk and water in a pot. Bring to a boil, then lower the heat and cover to simmer for about 15-20 minutes.
While the rice cooks, prepare the salmon by seasoning it with soy sauce, sriracha, garlic powder, and ginger powder.
Heat olive oil in a skillet over medium heat, then add the salmon fillets. Cook for about 4-5 minutes on each side or until cooked through.
Once the rice is cooked, fluff it with a fork and stir in lime juice and chopped green onion.
Serve the salmon over the coconut rice and garnish with extra green onions if desired.
