Spicy Bang Bang Chicken Bowls are the perfect meal prep solution for busy weeknights, combining tender chicken with spicy sauce and fresh vegetables.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup cooked jasmine rice
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons Sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1/2 cup green onions, chopped

Instructions

  1. In a bowl, mix mayonnaise, sweet chili sauce, Sriracha, soy sauce, garlic powder, and ginger powder to make the Bang Bang sauce.
  2. In a large skillet over medium heat, cook the chicken until golden brown and cooked through, about 7-8 minutes per side.
  3. Once cooked, slice the chicken and toss it with the Bang Bang sauce until coated.
  4. Prepare meal prep containers with a base of jasmine rice, add sliced chicken, and top with broccoli, bell peppers, and green onions.
  5. Drizzle any remaining sauce over the bowls before sealing the containers.

Notes

  • Adjust the spice level by adding more or less Sriracha according to your taste.
  • Feel free to swap out the vegetables based on your preferences or what’s in season.
