Spiced Parsnip Soup

  • 4 large parsnips
  • 1 onion
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • salt to taste

Instructions

  1. Peel and chop the parsnips, onion, and garlic.
  2. In a pot, heat olive oil over medium heat, add onion and garlic, and sauté until translucent.
  3. Add the parsnips, cumin, and coriander, cooking for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the parsnips are tender.
