A comforting spiced carrot and red lentil soup enhanced with coconut and tamarind chili oil for added flavor.

Ingredients

  • 2 cups carrots, diced
  • 1 cup red lentils, rinsed
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 2 tbsp tamarind paste
  • 1 tbsp chili oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add carrots and spices, cooking for a few minutes.
  3. Stir in lentils, broth, and coconut milk. Bring to a boil.
  4. Reduce heat and simmer until lentils are tender.
  5. Blend the soup until smooth, then stir in tamarind paste and chili oil.
  6. Adjust seasoning, and serve hot.

Notes

  • This soup can be made ahead and reheated when needed.
  • Feel free to adjust the spice levels by adding more chili oil.
