Southwest Chicken Casserole

Enjoy a delicious and easy-to-make Southwest Chicken Casserole that will satisfy the whole family.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 8 flour tortillas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, salsa, sour cream, chili powder, and cumin.
  3. In a greased baking dish, layer 4 tortillas followed by half of the chicken mixture and a sprinkle of cheese.
  4. Repeat the layers with the remaining tortillas, chicken mixture, and cheese on top.
  5. Bake for 20-25 minutes until bubbly and golden.

Notes

  • Serve with a side salad for a complete meal.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
