Ingredients

  • 2 medium zucchinis
  • 2 medium bell peppers
  • 1 large eggplant
  • 1 large onion
  • 3 cloves garlic
  • 2 cups diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables into bite-sized pieces.
  2. In a large bowl, mix together the vegetables, garlic, diced tomatoes, olive oil, basil, oregano, salt, and pepper.
  3. Transfer the mixture to the slow cooker and cover.
