Slow Cooker Ratatouille

  • 2 medium zucchini
  • 1 medium eggplant
  • 1 large bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 2 cups tomatoes, diced

  • Salt and pepper to taste

Instructions

  1. Chop all the vegetables into bite-sized pieces.
