Slow Cooker Lemon Herb Chicken and Rice

  • 4 chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In a slow cooker, combine the chicken breasts, rice, chicken broth, lemon juice, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Stir well to coat the chicken and rice evenly.
  3. Cover and cook on low for 4-5 hours or until the chicken is cooked through and the rice is tender.
  4. In the last 30 minutes of cooking, add the frozen peas and stir to combine.
  5. Once done, fluff the rice with a fork and serve immediately.

Notes

  • For extra flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
  • Can substitute brown rice for a healthier option, but cooking time may vary.
