- 4 chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 lemon, juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- In a slow cooker, combine the chicken breasts, rice, chicken broth, lemon juice, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Stir well to coat the chicken and rice evenly.
- Cover and cook on low for 4-5 hours or until the chicken is cooked through and the rice is tender.
- In the last 30 minutes of cooking, add the frozen peas and stir to combine.
- Once done, fluff the rice with a fork and serve immediately.
