  • 1.5 pounds boneless chicken thighs
  • 2 cups white rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 2 cups frozen peas

Instructions

  1. In a slow cooker, combine chicken broth, garlic powder, onion powder, thyme, salt, and pepper.
  2. Add chicken thighs and coat them with the mixture.
  3. Layer the rice evenly over the chicken.
  4. Drizzle lemon juice and olive oil over the rice.
  5. Top with lemon slices.
  6. Cover and cook on low for 6 hours or high for 3 hours.
  7. In the last 30 minutes, add frozen peas to the slow cooker.
  8. Once done, fluff the rice and serve warm.
