Slow Cooker Chicken and Dumplings

A warm and hearty dish perfect for weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 2 cups chicken broth
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups biscuit dough

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add carrots, celery, onion, chicken broth, thyme, salt, and pepper.
  3. Cover and cook on low for 7 hours or high for 4 hours.
  4. Shred chicken and return to the slow cooker.
  5. Add biscuit dough in spoonfuls and cook for an additional 30 minutes.

Notes

  • For a thicker sauce, add a cornstarch slurry before adding dumplings.
