  • 2 pounds brisket, trimmed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 bell peppers, chopped
  • 2 cans diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can kidney beans, drained and rinsed

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Brown the brisket on all sides, then transfer it to the slow cooker.
  2. Add the onions, garlic, bell peppers, diced tomatoes, beef broth, chili powder, cumin, smoked paprika, Worcestershire sauce, salt, and black pepper to the slow cooker.
  3. Cover and cook on low for 8 hours or until the brisket is tender.
  4. Once cooked, remove the brisket, shred it with two forks, and return it to the chili.
  5. Stir in the kidney beans and let it cook for another 30 minutes.
  6. Serve hot, garnished with your favorite toppings.
