- 4 large potatoes
- 1 pound ground beef
- 1 cup frozen peas
- 1 cup corn
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- 1 cup shredded cheese
- salt to taste
- pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
- Add ground beef, season with salt and pepper, and cook until browned.
- Stir in peas, corn, beef broth, tomato paste, Worcestershire sauce, and thyme. Simmer for 10 minutes.
- Once potatoes are done, cut them open and fluff the inside with a fork.
- Fill each potato with the beef mixture and top with cheese.
- Return to the oven for 10-15 minutes until the cheese is melted and bubbly.
