  • 4 large potatoes
  • 1 pound ground beef
  • 1 cup frozen peas
  • 1 cup corn
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1 cup shredded cheese
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  4. Add ground beef, season with salt and pepper, and cook until browned.
  5. Stir in peas, corn, beef broth, tomato paste, Worcestershire sauce, and thyme. Simmer for 10 minutes.
  6. Once potatoes are done, cut them open and fluff the inside with a fork.
  7. Fill each potato with the beef mixture and top with cheese.
  8. Return to the oven for 10-15 minutes until the cheese is melted and bubbly.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
  • Feel free to add your favorite vegetables.
