Shepherd’s Pie Baked Potato

A warm and hearty dish that combines classic shepherd’s pie flavors with a baked potato.

  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the russet potatoes until tender, about 1 hour.
  3. In a skillet, brown the ground beef or lamb over medium heat.
  4. Add the frozen peas and carrots, beef broth, tomato paste, Worcestershire sauce, salt, and pepper.
  5. Simmer for 10 minutes until thickened.
  6. Once the potatoes are done, cut them open and fluff the insides.
  7. Spoon the meat mixture over the fluffy potato insides.
  8. Top with mashed potatoes and cheddar cheese.
  9. Bake for an additional 20 minutes until the cheese is bubbly.
