Shepherd’s Pie Baked Potato

A delicious and comforting twist on a classic shepherd’s pie using baked potatoes and turkey bacon.

Ingredients

  • 4 large baking potatoes
  • 1 pound ground turkey
  • 8 slices turkey bacon
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 cups shredded cheddar cheese
  • salt to taste
  • pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for about 1 hour or until soft.
  3. In a skillet, cook turkey bacon until crispy, then remove and chop.
  4. In the same skillet, add ground turkey and cook until browned.
  5. Add peas and carrots, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 10 minutes.
  6. Once potatoes are done, cut a slit in the top and fluff the insides.
  7. Fill each potato with the turkey mixture and top with cheddar cheese.
  8. Return to the oven for another 10 minutes until cheese is melted.

Notes

  • For a creamier filling, add sour cream or cream cheese to the potato before filling.
