  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the ground chicken, breadcrumbs, feta, garlic, oregano, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Drizzle olive oil over the meatballs and bake for 20-25 minutes.

  6. Cook the orzo according to package instructions until al dente.

  8. Serve the meatballs on top of the zesty lemon orzo.
