Roasted Tomato and Garlic Ricotta Pasta

A delicious and simple pasta dish featuring roasted tomatoes and creamy garlic ricotta.

  • 2 cups cherry tomatoes
  • 4 cloves garlic
  • 1 tablespoon olive oil
  • 8 ounces pasta
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place cherry tomatoes and garlic on a baking sheet and drizzle with olive oil.
  3. Roast in the oven for 15-20 minutes until the tomatoes are blistered.
  4. Meanwhile, cook pasta according to package instructions.
  5. In a large bowl, combine the roasted tomatoes, garlic, ricotta, and cooked pasta.
  6. Mix in Parmesan cheese, salt, and pepper.
  7. Serve garnished with fresh basil.
