Roasted Sweet Potato Rounds with Honey & Feta

A delightful side dish that combines the natural sweetness of roasted sweet potatoes with the tangy flavor of feta cheese, drizzled with honey for an extra touch of sweetness.

  • 1/4 cup crumbled feta cheese
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and slice the sweet potatoes into rounds about 1/2 inch thick.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Bake for 25-30 minutes, turning halfway through, until golden and tender.
  6. Once out of the oven, drizzle honey over the warm sweet potato rounds and sprinkle with feta cheese.
  7. Serve warm and enjoy!

Notes

  • For a spicy kick, add a pinch of cayenne pepper to the sweet potatoes before baking.
