Quesadillas + Corn on the Cob

A delicious and easy-to-make recipe for quesadillas paired with corn on the cob and turkey bacon.

Ingredients

  • 4 tortillas
  • 1 cup shredded cheese
  • 1 cup cooked turkey bacon, chopped
  • 2 ears of corn on the cob
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat a skillet over medium heat.
  2. Spread butter on the tortillas.
  3. Place one tortilla in the skillet and layer with cheese and turkey bacon.
  4. Top with another tortilla and cook until golden brown, about 3-4 minutes.
  5. Flip and cook the other side until golden brown and cheese is melted.
  6. While quesadillas are cooking, boil the corn on the cob until tender.
  7. Season corn with butter, salt, and black pepper.
  8. Cut quesadillas into wedges and serve with corn on the cob.

Notes

  • For extra flavor, add diced peppers or onions to the quesadilla filling.
