  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and salt until well combined.
  6. Pour half of the cheesecake batter over the crust, then add dollops of the remaining batter, swirling with a knife to create a marbled effect.
  7. Bake for 60-70 minutes, or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use cream cheese at room temperature.
  • Add whipped cream and caramel drizzle on top for serving.
