- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 3 large eggs
- 1 cup pumpkin puree
- 1/2 cup powdered sugar
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- Preheat the oven to 375°F (190°C). Grease a 15×10 inch jelly roll pan with parchment paper.
- In a bowl, mix together flour, baking powder, baking soda, spices, and salt.
- In another bowl, beat sugar and eggs until fluffy. Stir in pumpkin.
- Gradually add dry ingredients to the pumpkin mixture until combined.
- Spread the batter evenly in the prepared pan.
- Bake for 13-15 minutes or until the top springs back when touched.
- While baking, prepare a clean kitchen towel with powdered sugar sprinkled on it.
- Once the cake is done, immediately invert it onto the towel. Roll it up with the towel inside and let it cool.
- In the meantime, beat together cream cheese, butter, powdered sugar, and vanilla until smooth.
- Unroll the cooled cake, spread the cream cheese frosting over it, and roll it back together.
- Chill in the fridge for at least an hour before slicing.
