  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 15×10 inch jelly roll pan with parchment paper.
  2. In a bowl, mix together flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, beat sugar and eggs until fluffy. Stir in pumpkin.
  4. Gradually add dry ingredients to the pumpkin mixture until combined.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 13-15 minutes or until the top springs back when touched.
  7. While baking, prepare a clean kitchen towel with powdered sugar sprinkled on it.
  8. Once the cake is done, immediately invert it onto the towel. Roll it up with the towel inside and let it cool.
  9. In the meantime, beat together cream cheese, butter, powdered sugar, and vanilla until smooth.
  10. Unroll the cooled cake, spread the cream cheese frosting over it, and roll it back together.
  11. Chill in the fridge for at least an hour before slicing.

  • You can add chopped nuts to the frosting for added texture.
