Protein Red Velvet Coconut Cake

  • 1 cup protein powder
  • 3/4 cup sweetener of choice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup unsweetened coconut milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon red food coloring

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine coconut flour, cocoa powder, protein powder, sweetener, baking soda, and salt.
  3. In another bowl, whisk together eggs, coconut milk, vanilla extract, and red food coloring.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Pour the batter into a greased cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let it cool before serving.
