Ingredients

  • 1 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon pomegranate juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup confectioners’ sugar
  • 2 tablespoons pomegranate seeds

Instructions

  1. Preheat the oven to macaron temperature.
  2. In a bowl, mix almond flour and powdered sugar.
  3. Whisk egg whites until foamy, then gradually add granulated sugar and cream of tartar until stiff peaks form.
  4. Fold the dry ingredients into the egg whites carefully.
  5. Pipe the mixture onto a baking sheet, and let it sit for 30 minutes.
  6. Bake for 15-20 minutes, then let cool.
  7. Prepare the buttercream by mixing butter, confectioners’ sugar, pomegranate juice, and seeds.
  8. Sandwich the filling between two macaron shells.
