One-Pot Lasagna Soup

A hearty and comforting one-pot lasagna soup that is quick to prepare, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in crushed tomatoes, beef broth, and Italian seasoning.
  4. Bring to a boil and then add the broken lasagna noodles.
  5. Cook until noodles are tender, about 10-12 minutes.
  6. Stir in ricotta cheese and half of the mozzarella.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with remaining mozzarella and Parmesan cheese.

Notes

  • This soup can be made in advance and stored in the fridge.
  • Feel free to add vegetables such as spinach or bell peppers.
