One Skillet Salmon with Lemon Orzo

A delightful one-skillet meal that combines succulent salmon with zesty lemon orzo.

Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Add orzo and stir for about 1 minute.
  4. Pour in vegetable broth, lemon juice, and zest; bring to a boil.
  5. Reduce heat and simmer until orzo is tender.
  6. While orzo cooks, season salmon fillets with thyme, salt, and pepper.
  7. Push orzo to the side of the skillet and add salmon fillets; cook for 4-5 minutes on each side.
  8. Combine salmon with orzo, garnish with parsley, and serve.
