ONE POT CHICKEN ORZO

A delicious one pot chicken orzo recipe that is perfect for a cozy dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken thighs, boneless and skinless
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 cup onion, diced
  • 2 cups chicken broth
  • 1 cup orzo pasta
  • 1 cup spinach, fresh
  • 1/2 cup parmesan cheese, grated

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Season the chicken thighs with salt, pepper, and garlic powder.
  3. Add the chicken to the pot and cook until browned.
  4. Add the diced onion and sauté until soft.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the orzo pasta and cook until al dente.
  7. Stir in the spinach and parmesan cheese until melted and combined.
  8. Serve hot.
