My Fave Birria Tacos

  • 2 pounds beef chuck roast
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat some oil and brown the beef on all sides.
  2. Add chili powder, cumin, paprika, garlic, and onion, stirring well.
  3. Pour in the beef broth and bring to a simmer.
  4. Cover and cook for 2 to 3 hours until the beef is tender.
  5. Shred the beef and serve in warm tortillas, topped with cilantro and lime.
