A rich and savory mushroom bolognese that redefines classic comfort food.

  • 1 pound mushrooms, finely chopped
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 cups crushed tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth
  • 1 tablespoon balsamic vinegar
  • 1 pound pasta of choice

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté until softened.
  2. Add chopped mushrooms and cook until they release their moisture and start to brown.
  3. Stir in crushed tomatoes, vegetable broth, oregano, basil, salt, and pepper. Simmer for about 30 minutes.
  4. Add balsamic vinegar just before serving.
  5. Meanwhile, cook pasta according to package instructions. Drain and combine with the sauce.

Notes

  • For a creamier sauce, stir in a splash of cream or milk just before serving.
  • Serve with fresh herbs and grated cheese if desired.
