- 1 pound mushrooms, finely chopped
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 2 cups crushed tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegetable broth
- 1 tablespoon balsamic vinegar
- 1 pound pasta of choice
- In a large skillet, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté until softened.
- Add chopped mushrooms and cook until they release their moisture and start to brown.
- Stir in crushed tomatoes, vegetable broth, oregano, basil, salt, and pepper. Simmer for about 30 minutes.
- Add balsamic vinegar just before serving.
- Meanwhile, cook pasta according to package instructions. Drain and combine with the sauce.
