MOIST Pumpkin Bread with Streusel Topping and Maple Glaze

Deliciously moist pumpkin bread topped with a crunchy streusel and drizzled with a sweet maple glaze.

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  4. Gradually add dry ingredients to the wet mixture, mixing just until combined.
  5. If using, fold in chopped nuts.
  6. Pour batter into the prepared loaf pan.
  7. In a small bowl, mix streusel topping ingredients and sprinkle over the batter.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Once cooled, drizzle with maple glaze.

Notes

  • Store leftovers in an airtight container.
  • This bread freezes well, wrap tightly in plastic and store in a freezer bag.
