- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 cup chopped nuts (optional)
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- If using, fold in chopped nuts.
- Pour batter into the prepared loaf pan.
- In a small bowl, mix streusel topping ingredients and sprinkle over the batter.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Once cooled, drizzle with maple glaze.
Notes
- Store leftovers in an airtight container.
- This bread freezes well, wrap tightly in plastic and store in a freezer bag.
