  • 4 cups corn kernels
  • 4 slices turkey bacon
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup queso fresco, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Remove and crumble.
  2. In a large bowl, combine corn, red bell pepper, red onion, cilantro, and crumbled bacon.
  3. In another bowl, whisk together mayonnaise, lime juice, chili powder, and salt.
  4. Pour the dressing over the salad and mix well.
