This Mexican Cornbread Casserole is a bold and hearty dish that combines layers of cornbread, flavorful meats, and zesty toppings for a comforting meal.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 cup shredded cheese
  • 1 package cornbread mix
  • 1 cup milk
  • 2 eggs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the ground beef until browned. Drain excess fat.
  3. Add in beans, corn, bell pepper, and half of the cheese. Stir to combine.
  4. In a separate bowl, mix cornbread mix, milk, and eggs until well combined.
  5. In a greased baking dish, layer the beef mixture, then pour the cornbread batter on top.
  6. Bake for 25-30 minutes until the cornbread is golden brown.
  7. Top with remaining cheese and bake for an additional 5 minutes until melted.

Notes

  • For extra spice, add jalapeños to the beef mixture.
