Ingredients
1 pound ground beef
1 can black beans, drained
1 can corn, drained
1 red bell pepper, diced
1 cup shredded cheese
1 package cornbread mix
1 cup milk
2 eggs
Instructions
Preheat the oven to 400°F (200°C).
In a skillet, cook the ground beef until browned. Drain excess fat.
Add in beans, corn, bell pepper, and half of the cheese. Stir to combine.
In a separate bowl, mix cornbread mix, milk, and eggs until well combined.
In a greased baking dish, layer the beef mixture, then pour the cornbread batter on top.
Bake for 25-30 minutes until the cornbread is golden brown.
Top with remaining cheese and bake for an additional 5 minutes until melted.
Notes
For extra spice, add jalapeños to the beef mixture.
Serve with sour cream and green onions for garnish.
