  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions

  • 1 pound turkey bacon
  • 1 pound chicken ham
  • 4 large flour tortillas

Instructions

  1. Cook the turkey bacon in olive oil over medium heat until crispy, then remove and let cool.
  2. In the same pan, scramble the eggs until fully cooked.
  3. Add the chicken ham, cheese, tomatoes, and green onions to the eggs, stirring to combine.
  4. Lay a tortilla flat and spoon the egg mixture into the center. Fold the sides in and roll up from the bottom.
  5. Wrap each burrito in foil, then place them in a zip-top bag for freezing.
