Low-Fat Chicken Florentine Pasta

A flavorful and healthier take on the traditional chicken pasta dish, made with fresh spinach and low-fat ingredients.

Ingredients

  • 8 ounces whole wheat pasta
  • 1 pound boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup low-fat yogurt
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add chicken breasts to the skillet and cook until no longer pink, about 6-7 minutes per side. Remove from skillet and slice.
  4. In the same skillet, add spinach and cook until wilted. Stir in the low-fat yogurt and Italian seasoning.
  5. Add the cooked pasta and sliced chicken to the skillet, mixing well to combine. Season with salt and pepper.
  6. Serve warm, garnished with additional spinach if desired.

Notes

  • For extra flavor, add grated parmesan on top before serving.
  • Feel free to substitute the chicken with shrimp or tofu for a different protein source.
