Loaded Potato Soup

Ingredients

  • 4 large potatoes
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced

Instructions

  1. Peel and dice the potatoes into small cubes.
  2. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pot, add onions and garlic, sautéing until translucent.
  4. Add diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream, salt, pepper, chicken ham, and half of the cooked turkey bacon. Simmer for an additional 5 minutes.
  6. Serve hot, topped with cheddar cheese, remaining bacon, and green onions.

Notes

  • For a thicker soup, use an immersion blender to blend a portion of the soup.
  • Feel free to add more toppings like sour cream or extra cheese.
