Lemony Chicken & Rice Soup

A comforting soup that combines the bright flavor of lemon with tender chicken and hearty rice, perfect for any occasion.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 6 cups chicken broth
  • 1 cup white rice
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  2. Add the diced chicken breasts and cook until no longer pink.
  3. Pour in the chicken broth and bring it to a simmer.
  4. Add the rice, lemon juice, lemon zest, thyme, salt, and pepper. Cook until the rice is tender.
  5. Stir in the chopped kale or spinach and cook until wilted.
  6. Serve hot and enjoy!
