Lemon Garlic Chicken (Sheet Pan with Potatoes & Broccoli OR Marinade)

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juice and zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound baby potatoes, halved
  • 1 pound broccoli florets

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, lemon juice, zest, salt, and pepper.
  3. Place chicken in a baking dish and pour marinade over it.
  4. Add potatoes around the chicken and toss to coat.
  5. Bake for 25 minutes.
  6. Add broccoli and bake for an additional 15 minutes.
  7. Serve hot.

Notes

  • For extra flavor, marinate the chicken for a few hours before cooking.
