  • 1 pound ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tablespoon lemon zest
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup parsley, chopped
  • 8 ounces orzo pasta
  • 3 cups chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, ricotta, breadcrumbs, egg, lemon zest, garlic powder, salt, pepper, and parsley. Mix well.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until golden brown.
  5. In a saucepan, heat olive oil over medium heat and sauté minced garlic until fragrant.
  6. Add orzo and chicken broth to the saucepan, bringing it to a boil. Reduce heat and simmer until orzo is tender.
  7. Serve the meatballs over garlic orzo, garnished with extra parsley.

Notes

  • For added flavor, include grated parmesan cheese in the meatball mixture.
  • Let the meatballs rest for a few minutes before serving for better texture.
